Watermelon Mochi

Ingredients
  

  • 240 ml watermelon juice
  • 120 g glutinous rice flour
  • 50 g sugar
  • 60 ml water
  • 30 g Cornstarch for dusting

Method
 

  1. Combine the glutinous rice flour and sugar together until well combined.
  2. Add in the watermelon juice and water, stirring until the mixture is smooth.
  3. Pour the mochi mixture into a steaming dish lined with parchment paper.
  4. Steam for about 20 minutes, or until the mochi is set.
  5. Allow to cool slightly, then dust your hands with cornstarch and cut the mochi into bite-sized pieces.

Notes

For a fun twist, try adding different fruit juices or purees to the mochi mixture.
