Ingredients

Cake Mix
  • 3 large Eggs Use flax eggs for a vegan version.
  • 240 ml Water Substitute with milk for richness.
  • 3 packages Gelatin (various colors) Use fruit-flavored gelatin for natural flavors.
  • 227 g Cream Cheese Try a dairy-free alternative for vegan option.
  • 113 g Butter Can be replaced with dairy-free butter substitute.
  • 240 g Powdered Sugar Adjust to taste.

Equipment

  • 9x13 inch Pan

Method

  1. Prepare your cake mix according to the package instructions, adding in eggs and water. Bake in a 9x13 inch pan at 350°F for about 25-30 minutes or until a toothpick comes out clean.
  2. Let the cake cool completely, about 1 hour, to ensure the gelatin sets properly.
  3. Use a wooden skewer to poke holes across the entire surface of the cake, spacing them about 1 inch apart.
  4. Prepare each gelatin flavor separately, pour into the holes, and refrigerate between additions until fully set, about 30-60 minutes.
  5. Whip together softened cream cheese and butter with powdered sugar until smooth. Frost the top of the cake generously once all gelatin layers are set.
  6. Refrigerate the frosted cake for at least 30 minutes to let the flavors meld and the frosting firm up.

Notes

This cake is perfect for celebrations! Feel free to use different colors of gelatin to match the theme of your event.
