Ingredients
  

  • 2 cups cooked rice
  • 1/2 cup chicken diced
  • 1/4 cup onion chopped
  • 1/4 cup green peas
  • 2 tablespoons ketchup
  • 2 eggs
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Method
 

  1. Heat butter in a pan over medium heat.
  2. Add onion and sauté until translucent.
  3. Add chicken and cook until no longer pink.
  4. Stir in cooked rice and green peas.
  5. Add ketchup, salt, and pepper; mix well.
  6. In a bowl, beat the eggs and season with salt.
  7. Pour eggs into a heated non-stick pan and cook until slightly set.
  8. Add the rice mixture on one side of the omelette.
  9. Fold the omelette over the rice and slide onto a plate.
  10. Garnish with additional ketchup if desired.

Notes

  • Use leftover rice for best results.
  • Customize with your choice of vegetables.
  • Serve immediately for best taste.
