Ingredients
  

  • 2 large potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 2 green onions chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly.
  3. Cut a small slice off the bottom of each potato to create a flat base.
  4. Drizzle olive oil over the potatoes and season with salt and pepper.
  5. Bake for 45 minutes or until the potatoes are tender.
  6. Remove from the oven and let cool slightly.
  7. Cut a small section from the top of each potato to create a lid.
  8. Carefully scoop out some flesh to create space for filling.
  9. Mix the scooped potato with cheese, sour cream, and green onions.
  10. Stuff the mixture back into the potatoes.
  11. Return to the oven for an additional 10 minutes.
  12. Serve warm and enjoy your cute potatoes.
