Ingredients
  

  • 6 medium potatoes peeled and diced
  • 1 onion chopped
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon cooked and crumbled
  • Chives for garnish

Method
 

  1. Place potatoes and onion in the crock pot.
  2. Add broth, garlic powder, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. Once cooked, mash some of the potatoes for a creamy texture.
  5. Stir in heavy cream and cheese.
  6. Top with bacon and chives before serving.
