Ingredients
  

  • 2 pounds potatoes diced
  • 1 cup celery chopped
  • 1 cup red onion diced
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • 1/2 cup crispy bacon bits optional

Method
 

  1. Boil the diced potatoes until tender, about 10-15 minutes.
  2. Drain and let cool completely.
  3. In a large bowl, combine cooled potatoes, celery, and red onion.
  4. In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the potato mixture and stir gently.
  6. Add parsley and bacon bits, if using.
  7. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Adjust seasoning to taste.
  • For extra crunch, add diced pickles.
  • This salad can be made a day in advance.
