Ingredients
  

  • 200 g ramen noodles
  • 2 tablespoons miso paste
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 2 green onions sliced
  • 1 tablespoon ginger minced
  • 2 cloves garlic minced

Method
 

  1. Cook the ramen noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
  3. Add mushrooms and bok choy. Cook until softened.
  4. Stir in miso paste, peanut butter, soy sauce, vegetable broth, and coconut milk. Mix well.
  5. Bring to a simmer and cook for 5 minutes.
  6. Add cooked ramen noodles to the pot and stir to combine.
  7. Serve hot, garnished with green onions.

  • This recipe is vegetarian and can be made vegan by using a plant-based miso paste.
