Ingredients
  

  • 6 medium potatoes diced
  • 1 onion chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chives for garnish

Method
 

  1. Peel and dice the potatoes and chop the onion.
  2. Place potatoes, onion, and vegetable broth in the crockpot.
  3. Cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in heavy cream and cheddar cheese until melted.
  6. Season with garlic powder, salt, and pepper.
  7. Serve hot and garnish with chives.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Can substitute heavy cream with milk for a lighter version.
  • Store leftovers in the refrigerator for up to 3 days.
