Ingredients
  

  • 4 cups diced potatoes
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 cups cornflakes
  • 1/4 cup melted butter
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced potatoes until tender, about 10 minutes.
  3. In a large bowl, mix the cream of chicken soup, sour cream, and cheddar cheese.
  4. Add the drained potatoes to the mixture and stir well.
  5. Pour the potato mixture into a greased baking dish.
  6. In a separate bowl, combine cornflakes with melted butter.
  7. Spread the cornflake mixture over the potato mixture.
  8. Bake for 30 minutes or until golden brown.

Notes

  • Use any cheese of your choice.
  • For extra flavor, add chopped onions or garlic.
  • Let it cool for a few minutes before serving.
