Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chives for garnish

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add diced potatoes and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Use an immersion blender to puree soup until smooth.
  6. Stir in heavy cream and season with salt and pepper.
  7. Garnish with chives before serving.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • This soup can be frozen for up to 2 months.
  • Adjust the thickness by adding more or less broth.
