Chickpea Potato Curry: A Warm Hug in Every Bite

Ingredients
  

  • 1 cup chickpeas soaked overnight
  • 2 medium potatoes diced
  • 1 large onion chopped
  • 2 tomatoes chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat oil in a pot over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add onions, garlic, and ginger. Sauté until onions are translucent.
  4. Add diced potatoes and cook for 5 minutes.
  5. Add tomatoes and curry powder. Stir well.
  6. Add soaked chickpeas and enough water to cover the mixture.
  7. Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  8. Season with salt and garnish with fresh cilantro before serving.

Notes

  • Serve with rice or naan.
  • Adjust spices to your taste.
  • Leftovers can be stored in the refrigerator for up to three days.
