Ingredients
  

  • 200 g old-fashioned oats *
  • 50 g sugar or honey
  • 1.5 tsp baking powder
  • 0.25 tsp baking soda
  • 1 tsp cinnamon
  • 15 g cornstarch optional but recommended
  • 240 g mashed ripe bananas about 2 medium
  • 240 g cottage cheese
  • 2 large eggs
  • 1.5 tsp vanilla

Method
 

  1. Preheat the oven to 350°F and grease a 12-cup muffin pan well. Do not use paper liners.
  2. Blend the oats in a blender to make oat flour and add it to a large bowl.
  3. Add the sugar (if using), baking powder, baking soda, cinnamon, and cornstarch to the oat flour bowl and whisk to combine.
  4. In a blender jar, add the cottage cheese, mashed bananas, eggs, and vanilla. Blend until just combined.
  5. Pour the blended mixture over the dry ingredients and stir gently until just combined.
  6. Let the batter sit for 5 minutes to thicken, then spoon it into the muffin cups 3/4 of the way full.
  7. Bake for 25 to 28 minutes until tops are brown and a toothpick comes out clean.
  8. Let muffins cool in the pan for 5-10 minutes before removing.

Notes

These muffins can be stored in an airtight container for 2 days at room temperature, or refrigerated for up to 5 days. Enjoy warm or at room temperature.
